Winemaker Comments: Cabernet Sauvignon was hand harvested in the early morning under perfect conditions. The berries were gently de-stemmed (without crushing)directly into stainless steel open top fermentors. Fermentation lasted 18 days before being lightly pressed into once used French oak barrels. The wine was racked by gravity flow every 4 months.
Tasting Notes: A saturated deep ruby color that is enhanced by the addition of the Petit Verdot. The rich aromatics are reminiscent of cassis, violets, cedar and espresso. On the palate the wine is opulent and mouth coating with flavors of vanilla, spice, and ripe blackberries. The bright acidity and smooth tannins lead into a long and complex finish. This is a powerful wine that can be enjoyed now or cellared for the next decade.
Aging: Aged 23 months in 100% French oak barrels. The wine was racked from barrel every 4 months.
